recipe: Choc Raspberry Cheesecake
Ingredients
250g chocolate ripple biscuits
80g butter, melted
500g Philadelphia cream cheese, softened
1/2 cup caster sugar
200g milk chocolate, melted
1/2 cup cream
300g frozen raspberries
Fresh raspberries and chocolate for decorating
How to make this recipe
First step : Place chocolate biscuits into a food processor and process to a fine crumb. Add butter and mix together. Press into the base and sides of a lightly greased 20cm springform pan and chill.
Second step : Beat Philly cheese and sugar together using an electric mixer until smooth. Beat in melted chocolate and cream until well combined. Fold through frozen raspberries.
Finally step : Pour into the prepared crumb base and refrigerate until set. Serve topped with fresh raspberries and shaved chocolate.
